I have taught the wife to "flex" a brisket to determine the presence of a large glob of fat in the middle of it; as she does most of the meat purchasing, flex not a bend and stretch jane fonda exercise... :laughing7: :laughing7:
OUP I think I remember some one taking offense to that cant remember who, I suppose the world is full of cant live and let live folks... This is the US of A and we have certain rights no matter what folks want to do or think... :salut:

Got the bark, got the temp, got the wobble, going into the cooler.. eta to chow down 6-8 hrs. Headed to bed shortly...

That there looks legit... Mine is still going, I'll be taking a peak around 11... I hope it looks like that!!!!


This Wagyu definitely released a lot more oil than primes typically do.. hoping all goes well once I cut into it... good luck. Remember we always have chop beef and chili to fall back if things don’t go well.. ha
