Tie Up My Butt?

When I pull a pork butt out of its vacuum wrap, it sometimes "spreads out" a little. Not a bad thing, IMHO, because it provides access to a larger surface area for applying rub. BUTT, do you leave it that way during the cook, or do you cinch it up with some butcher's twine. If you always do it one way or the other, why? I'm just curious if there's a concensus out there. Thanks!

Trussing helps provide some structural support. It helps hold shape and helps keep any filling, should you decide to stuff it, inside where it belongs. Since the general consensus cooks a pork butt unstuffed, to shred to yummy little bits, it's not common practice.

Kinda like one of them old gals you used to pick up at a beer joint and take home with ya in our younger days. Them Wranglers or Levi's Vacuum wrap the contents and when you open the package, everything get's bigger.
