How long prior to hitting the smoker do you season your pork ?
Just prior?
Overnight?

Thanks

Also, if you had a 11 pounder, when would you toss it on the smoker to eat for dinner around 6pm Saturday night?
Probably smoke in the neighborhood of 250.
Thanks

I season the night before and wrap in plastic wrap. In the morning when the cooker is getting ready I unwrap the butt and lightly season again.
I cook butts between 275° and 325° an 11 lber. wrapped at 170° will take about 8 hours.
Always remember slow and steady wins the race.

^^^ This. I like to season and plastic wrap a MINIMUM of 8 hours prior.

Why 275 to 325 vs. 225 to 250 ?

Thanks

275° to 325° is my desired cook temp for all smoking. I have not cooked below 250° in a long time plus pork butts are full of internal fat and can really take the heat.

I am a 250 degree kind o guy, I cross cut the surface of the butt to get seasoning in deep, the cook and like kam said wrap about 170 until the bone wiggles freely... I usually season 10 minutes or so prior to cooking, just me and my method
