Fajita seasoning/rub

Hey family!

I need some help. I’ve spent the last three weeks searching for a fajita rub/ recipe.

1.) which fajita rubs do you recommend?

2.) is it necessary to marinade? If so what do you use?

I’ve tried the goya mojo criollo, but didn’t like it.. sometimes I prefer not to marinade so the beef flavor is the star. What do you all think?
Any help would be greatly appreciated.

Welcome! When I make fajitas, I don't marinate them but I do like to spritz them with lime juice as they cook.. I keep the seasoning VERY simple; salt, pepper, garlic, onion, cumin. I'll season them roll up the skirt steaks and put them in a ziploc for a few hours. When they go on the grill, it's over direct heat. Cook soda one for about 3 minutes or so then flip.. Spritz with lime juice while the other side gets color.. After 3 minutes, flip n spritz.. after all have gone through this at least once, I move them away from direct heat for about 20 to 30 min.. pull then rest for 15.. Slice across the grain... Enjoy!!

There are a few seasonings out there, check out our sponsors website “Sucklebusters” for something.

Tell you what I do for a marinade that I think is pretty good.
I put the Fajitas in a big zip lock bag and then add,... a bottle of Zesty Italian dressing, a bottle of chunky salsa and a 12 oz can of beer. “Open the beer and pour it in the bag” LOL
Let the fajitas sit in the marinade for at least 4 hours, mixing when you can.
After your grills good and hot, take em out of the bag and directly on the grill.

We like Fiesta brand fajita seasoning. A good marinade is one large can of Texun unsweetened orange juice and a large bottle of teriyaki sauce.

I've tried lots of rubs, but they never got there for me. I tried Ree Drummond's fajita marinade last year and found what I was looking for.

You can adjust this marinade by adding whatever you want. It's a great start to spice up to your liking - all the "traditional" fajita flavors are built in. I use it stock. Here it is:

1/2 cup olive oil

1/4 cup chili powder

3 tablespoons Worcestershire sauce

1 tablespoon ground cumin

1/2 teaspoon red pepper flakes

3 cloves garlic, minced

Juice of 3 limes

1 tablespoon sugar

1 teaspoon salt

1/2 teaspoon black pepper

In a blender, combine the olive oil, chili powder, Worcestershire, cumin, red pepper flakes, garlic and lime juice. Next add the sugar, salt and pepper and blend the marinade until it's totally combined and smooth.

I use Texas Dragon's method, and add a little tequila to the lime juice for the spritz, gives a margarita flavor or maybe just my imagination?

Fiesta Fajita Seasoning is my go to but I also like to mix it up with Oakridge BBQ Santa Maria for a change of pace. For a marinade I like Claude's Fajita. Usually the low sodium marinade then top with rub.

If anyone is still interested in this.
I will grill a package or two of HEB marinated fajitas, then cut them into meal size portions, vacuum seal, then freeze them.
When ready to eat them, I stick the sealed package into boiling water until they are hot. The meat is unbelievably tender and very tasty.
