Help! Is my brisket safe?

Postby Gulfpirate101 » Sun May 12, 2019 9:14 am

Pulled the brisket last night a little after 11. Opened it up and let is rest to 165 then wrapped in two layers of foil and put in the oven on warm at about 12:30. Woke up this morning at 8 and come to find out, the warming function shuts off after 3 hours. Internal temp on the brisket at 8 was 125. Currently re heating, but considering scrapping....thoughts?

It will be fine in my opinion; that doesn’t make it correct. I’d eat it and go right on down the road

It should be fine.. 1, it was above 160 when put away.. 2, it was not handled at any point after, UNTIL this morning. Heat it to >160 and you'll be fine.
