Hey guys,

I'm after a bit of help, I've got an event on soon where I'll be doing 5 butts and brisket chilli. I normally do the butt cook all night and serve the next day but it absolutely knackers me out! Has anyone ever cooked a whole butt and re heated it on a smoker at a high temp? I figured it would add a bit of theater to the event as well having the butts come off the smoker rather than hot holding in a cooler, and I could get some sleep for once ;)

Any help would be great!

Sure that is very doable. Cook the butts and let cool to 140° then wrap in plastic wrap and either vacuum seal or big freezer bags then ice bath to get them below 40° then refrigerate. The day of the event place in pans with about a cup of apple juice covered with foil and get to above 165° in under three hours. In other words run your cooker hot like an oven about 325° - 350°.
