Smoked ribs

Fired up the WSM today, even if the rain was pouring all day.

Smoked a couple of pork ribs. Didn't get the pullback I thought I would get but the ribs ended up very tender. Falling of the bones, which is how we like them.

Rubbed the ribs with SB Hog Waller honey and back in the fridge for an hour. Smoked with applewood and oak from used aquavit barrels. Smoked for 2.5 hours on 270. Then pulled from the WSM. Sprinkled with brown sugar and honey. Packed in tight foil with some apple juice. Back on the WSM for another 1.5 hour at 270. Then out of the foil, glazed with SB chipotle sauce and back on the WSM for another 10 minutes.

Made some ABT'S and a few bacon Jarlsberg cheese sausages.

All served with fries and coleslaw. We marinate the slaw with apple vinegar, water, olive oil, sugar and S &P for a couple of hours before adding mayo. Drain and add mayo.
