Here is a list from years past I have and your walnut is right there..
We have that list posted here as well. The thing that concerned me is that despite that list, there were many people that said not to use it for (fill in the blank). That was troubling because there was that list all over the internet that listed it was cool. Another interesting item is that Hackberry is listed there and I remember WAAAYYY back to my childhood days my uncle would shoo me away from the tree burn pile if Hackberry was burning as he said it was harmful in some way. I don't remember the reason it was bad or even if he said so, but I do remember the dried wood not burning well, and the green stuff was even worse. Lol!

I do know pimiento wood is used...especially for jerk chicken. I think it's the tree that produces allspice.

Did a chicken with walnut. The color was awesome! This shot was about 2 hours in at 275. I added a chimney of lump to bring the temp up. It finished about an hour and change later at 325. The color was a little darker, nice mahogany color. I didn't get a finished shot though.. whole bird was about the color of the wings in this pic, if that helps. Lol!

Thanks! I had to debunk some myths about using this wood..
It is fantastic for smoking. Strong, but pleasant flavor.
Like mesquite, a little goes a long way.
