Yes, I would sell none spoiled food to a customer, even more so if its pulled pork which would most likely stay moist and keep a good texture. Brisket, ribs, chicken and such have a greater chance of drying out and getting stringy, but if they weren't dried out and not spoiled, all is good and safe to eat. Now that being said, if it has been frozen a defrosted twice the texture and moister is probably lacking along with some of the flavor, I would not want to sell it... but it is safe to eat.

Like I said in my original post. "Not saying they are bad bud". But based on the information given and knowing there are some unknown variables like how long it took to get above 140° I gave my opinion.
I look at questions like these as I do when someone ask's me structural questions about building a trailer. If you have to ask maybe you should not go forward with the project it is safer to buy. I aired on the side of caution for the OP in this case.

Thanks for everyone getting Involved in this, I always enjoy reading peoples opinions on everything!

It's still in my freezer, I might eat some myself but I fully wouldn't serve it to paying customers. I dont want to put my business name on the line selling sub standard food as I only want to sell great barbecue. I've been asked to bring my barbecue business into a bar in my city to create Prestons first ever smokehouse so before that opens any events I do needs to be amazing and safe food so I don't get a bad rep.

If I had cooked it once then chilled and frozen straight away, I would have no issue with that as it's a good way to save time before events and still tastes amazing.
