Tried smoking some pre sliced, pre marinated Kalbi ribs that were on sale. Was a little nervous to do slices so thin on the smoker...but figured what the heck I should at least try it. Normally, I'd just sear them like a steak. But they turned out really incredible! A nice mix of dry, almost jerky like, yet still moist and juicy in the thicker parts. Seasoned with SuckleBusters SPG. Smoked for about 4 hours at 240. Finished with a mongolian BBQ sauce.
Also did a rack of beef ribs, seasoned with SPG. 6 hours at 240. For $3.50/lb it has to be one of the best bang for your buck meats out there. I'm hooked.
And a few bacon wrapped jalapeno poppers for good measure! Easily the best meal of the week :)

Got to tip my hat to you sir. I've tried those Kalbi ribs a couple times in the past. They were a complete and total fail. Yours however look great.
