Puff, I think it all looks really good. So many things can affect a meringue. I'll try to find my recipe. It doesn't call for cream of tartar just egg whites, sugar, and vanilla. So far, it's always worked great but I haven't tried it when the humidity is really high.

You could always just go with some fresh whipped cream! I'm not a huge meringue, but love key lime pie!

ok if it is that bad just send it to me and I suffer would not wont it go to waste :roll: :wink:
all looks great to me I can never get that right either but yours looks better than mine it is something about meringue on a lime or lemon just have to have :dont:

Beat until whites are stiff. You almost need one of those kitchen aid mixers machines to get 'em stiff.

I beat those eggwhites black and blue. :shock:
I think I used to much sugar. There was a little pool of liquid between the meringue and the pie filling when I took it oven.

Aloha,

A trained chef, unlike me, once told us that the bowl that the whites are beaten in has to be perfectly clean. He also told us to use a metal, glass or porcelin bowl and not plastic bowls :roll:
