Tacos al pastor

Decided to have some friends over for Sunday with a Southwest and Mexican theme so southwestern lime chicken with a marinate for 36 hours and slight change using a pork shoulder marinating for 48 hr with double injection. The wet sauce first then pineapple juice injection just prior to smoking it. The flavor is better I think with the recipe I used. I’m going to smoke it tomorrow then add some extra sauce on it after being pulled. Pics in the morning promise.

I injected it yesterday and having second thoughts on how to add more pineapple flavor into the meat. Specifically, I’m trying to decide whether to braise it or inject pineapple juice. I’m thinking on braising it once it hits 165* cover with foil until done. Any thoughts?

Wouldn't the injection provide more tenderizing and the braising more flavor ? Just wondering hmmmm?

Well I already injected it but not with the pineapple juice. I swear I read somewhere not to inject with juice until you’re within so many hours of smoking but I can’t seem to find that any more.

The acids in the juice will begin to cook the meat. Think of seafood ceviche, cooked in juice only.

Pulled da meat and added some of the reduced liquid back in. I’m sure it will make a turd in the morning. Happier with the results this time than the last. I thought it was going to be spicier but it calmed down after the cook

Always good to pace yourself but I think everyone ate like 3/4 of a pound of meat. More than half were under 16.
