Been a long time

I haven't been on the forum for a while. Other interests have had my time.

I still smoke meat regularly on my offset smoker.

We recently moved farther out of town. We had a house warming yesterday and I smoked two briskets. Part of moving was that the wife and I got to splurge on a few new toys. I'm a tech geek, so I took the plunge and picked up a fireboard.

It didn't arrive until after I started the cook, but here's the graph from the cook.

I cook to temp up to 190 and then I do the probe test every 5 degrees until done.

Brisket1 was 11.5 lbs
Brisket2 was 13 lbs

At around 4 o'clock I threw some wings on for the boy and I for dinner. I think he ended up with more on his face than in his belly.

The 13 lb brisket was devoured yesterday and the 11.5 is for a party today. The picture of the field is my new view from the pit.

The meat pic is when they were wrapped and rubbed Thursday night. ImageImageImage
