Breaking In The New Smoker

Hey all, it's been a while, I hope everyone had a great summer. I finally had a chance to load up the new smoker.....well, mostly, this thing is huge.

I got a Lone Star Grillz large insulated cabinet this past winter and have been so busy with work I haven't had a chance to use it much. I had some family come in from Florida, Louisiana, and parts of Texas and smoked some brisket, ribs, chicken, and sausage. Killer cook! Killer cooker!! Safe to assume that bad boy is easy to run with stable temps? Curious to know what you were cooking on prior to this vault? How long did it take to preheat/stabilize? Lots of questions... sorry ;)

Yes this thing holds temp like a champ. You do have to figure out where to set the ball valve. It runs better at low temps with water in the pan. I will eventually get a fan for it. I already have a controller that came with my Monolith kamado smoker. It takes about 45 mins to come to temp. I usually start with ball valve fully open and then close it down to about 1/4 open when about 20 degrees short of my desired range. You can add water from a hole in the top without opening the door. A loaded charcoal pan lasts for 30 plus hours. It is not a reverse flow, it has slots in the area between the water pan and wall all the way around. I wasn't really in the market for a smoker. I just bought my Monolith last summer. It is the larger unit with the built in bbq guru. I still use it for smaller cooks. I also have a Blazn Grill Works Grid Iron pellet smoker, 22 in Weber Bullet, Old Country offset, Weber Gas Grill, and a charcoal grill....my wife says I have a problem, lol.

Thanks, Weldon! Off topic, but how do you like your Blaz’n?[/quote]I like the Blazn, it could use a bit more smoke flavor but I have the grill works smoker box and a smoke tube that I use. The temps usually stay within a couple of degrees of the set temp. It's a nice looking smoker too. I have the copper vein color. Also insulated lid and cover. Also the direct sear kit. I will probably put it up for sale soon, I just don't use it enough.

Gotcha! Was just curious. It’s so interesting to me how taste/preference is so subjective. Personally, after having cooked on pretty much every type of mainstream cooker over the past 25+ years, I have found my pellet cooker to be one of my all time favorites on numerous levels. As they say... variety is the spice of life, and I honestly think that is why this hobby/craft never gets old :)

The irony of it all is that the smoker that I feel produces the best smoke flavor I use even less than the pellet smoker. The offset needs a lot of babysitting and I don't have the time for that anymore. I wish I did though, I enjoy playing with fire
