Piney's Q Shack is Running Today

It was a nice break in the cold, up to almost 60 degrees and sunny. Great smoking and grilling weather. :D

I did a freezer dive last night and dug out a small round roast and some shrimp.

The Q Shack is fired up:

The roast was rubbed with SB Campfire (thanks, OUP!), and smoked at 250 with a load of mesquite wood to an IT of 128. I'm going to chill it a bit before I slice it on my slicer:

While the roast was smoking, I needed a snack - Goya Mojo marinaded shrimp:

Joe, I've never considered remoulade for beef. I have some here and will try it :D

It's great, but only for beef roast in a sandwich or on a slice of bread.
