How does my setup look? Plan to cook it on the 3rd...

Yup.... I'll be tagging along for this adventure as well. I've had good success wet aging briskets in spite of the link's less than stellar review of that process. More pics please..... :chef:

Cool, can't wait to see the results. I've been wanting to try this using an Umai bag.

I bought a dry aged ribeye from Fresh and plan to cook it tonight or tomorrow.
