Pork Belly Burnt Ends

Thinking about doing some Pork Belly Burnt Ends. I have never done them before. Anyone have any advice? What rubs, glazes etc.... Thanks in advance! I hope everyone has a Safe and Enjoyable Christmas with Family and Friends. Merry Christmas and a Ho Ho Ho! :santa:

I have done it a few times. I follow Malcolm Reeds procedure. You find it on you tube.

Regarding rubs I've used SB Pecan and the SB honey bbq sauce at the end.

Have usually ended up great.

Have done several pork bellies, recommend savory vs sweet. I score and marinate in some rub and SB sauce for a couple days, then hard sear before finishing in the smoker 7-9 hours. Candy coat w a SB glaze in the last hour or two. Haven’t taken them all the way to burnt ends As far as cook time, but man are they good. One of my favorite things to cook.

Gotta really watch the flare ups and fire hazard during the sear stage (do mine over open hickory) as they can hit flash point and turn into a torch fairly quick.

Will be doing some for my birthday next Thursday will post some photos.
