Brisket Tuesday. Put one on at 6:00 and pulled it off at noonish, then rested an hour in an ice chest. This may be my best - certainly my juiciest. Sissy slices not allowed.
Bought two prime briskets about a month ago. Trimmed both and injected with beef broth. Smoked one and vacuum packed the other and it went into the freezer. Pulled it out of the freezer yesterday morning, rubbed this morning and on to the egg at 290 grid temp. Wrapped at 165-170ish. Pulled when it probed like butta.
