Texassippi Pot Roast
Did a little twist on that new fangled thang they call Mississippi Pot Roast. Threw a couple of pot roasts in some smoke for 3.5 hours, and now it's in the slow cooker, with some ranch & aus jus seasoning, diced tomatoes & green chiles, butter, and pepperoncinis. We'll call it Texassippi Pot Roast

It ate!
Nice smoke intensity with the tart of the pepperoncinis, laid on a bed of mashed red taters!

Definitely shredded. There’s no good slicing on a chuck roast cooked that long. :)
