Sounds like some good stuff. Guess it been two years since I got up enough energy to make sausage. Have made quite a bit in times past. I usually go in around 20 lb increments. Tried 40 lbs a time or two and that is just too much work for one person to handle at a single sitting. Never have fiddled with pre mixed seasoning much. Did have some from Joe Ames but dont think I ever got around to using it. Have heard many good things about Legg's sausage seasoning. Got an old sausage chum or two who swears by the stuff.
