I decided to give a venison roast a try, having never done one. So I fired up the Egg and set it to about 235. Seasoned the roast with a mix of Salt, Paprika, Sugar, coriander, cinnamon, red pepper, bay leaves, allspice, thyme, celery, cloves, Brown Sugar, Onion, and Garlic ground super-fine.
I put the roast on the egg until it hit 125 and then panned it. In the pan was a new thing I have been wanting to try: Wagyu tallow. I brushed the roast once a few minutes to panning and then put about a 1/4 inch in the bottom of the pan and back on the Egg. I brought it to about 140 IT and fired the Egg to about 600 degrees and seared the roast all the way around and then let it rest for about a half hour.
The roast came out great, nice and juicy and tender. Paired with some fingerling potatoes and veggies for a great meal. I'll be doing this again!

A Job Well Done - - - most of the time when you cook Wild Game (aka Venison) in the Oven, if you don't Pan it, it can come out very dry. However, you took all the steps to get this Bambi Roast to come out Perfect and the Sides are Choice also. That Pic would be the Centerfold of any Wild Game Recipe Book
