Smoked pork belly lollipops

Postby Norway Joe » Sat Oct 28, 2023 12:49 pm

Saw a recipe on YouTube a few days ago that I wanted to try.

Took a slab of pork belly where I removed the skin and bones and cut into strips.

Rubbed with Sucklebusters hogwaller honey bbq rub.

Smoked for 90 minutes on 275 f. and then for another hour on 350 f.

Glazed it with a Texas bbq sauce I got as a sample. An excellent sauce, of course.

Drizzled over a little honey when resting.

Served with caramelized onions and baked potatoes.

This will be another favorite in our house.

Nothing better than properly rendered pork belly. Well done!

Those are beautiful Joe, love the creativity of smoking the as roundels.
