Chuck roast

Some of you may have seen it, but thought I would do a chuck roast for the first time.
3 1/2 lb chuck roast on at 630 am. At noon it got foiled with some beef broth, and went til 4 pm when it was rested for an hour. Used it as pulled for sandwiches with provolone, onions, sauteed mushrooms (forgot to add before pic), and jalepenos. there really isn't anything on the jaleps to the right...have no idea what that is.

Very tender and juicy.
Next time will do as a pot roast and add pototoes and veggies the last couple hours.

Nice lookin! Whoda thunk a piece of meat like that would take so long to smoke! Love the pulled chuck, especially for tacos or burritos

I might start liking it better. Went and bought 2 more boneless, and 2 bone in last night.

Thanks!! With my budget, I can't always afford to do as much for people as I would like, but I knew he was trying to get his catering business going, and I'm a big fan of free enterprise, and I just didn't use my WSM. Kinda silly to let it sit smokeless!
