I remember sitting in a diner in Estes Park - looking out the window at a whole town of
Prairie Dogs, they were to cute to eat (my wifes words)

I look at it this way, in colorful Colorado we have tree rats (squirrels), rats, and ground rats (prairie dogs). Yep, some are cute but in the end they are all vermin. Why ground rats are hated more than the other rats is beyond me. The Mrs wanted to feed the tree rats a while back  , I said no way . Not negotiable. So to this day the hummers get nectar and the ravens get bones (until the bears start showing up).

Ravens, we got some with seven foot wing spans. They'll fly away with a beef rib bone in their mouth. Smart birds. They've been documented to drop nuts in front of cars at a red lights so the car will crush the nut when the light turns green. They wait till the light changes again to retrieve the meat of the crushed nut. In Norse mythology the HMFIC Odin had two Ravens (Hunin and Munin) who were essentially spys on the Humans for Odin.

Getting back to the thread, I don't know if a ground hog and a prairie dog are the same critter but if they aren't, they're cousins.

I cook mine with snipe - takes the gamey flavor out of it.

I find that Hot and Fast works best on the yearlings, but slo and low is better on the older ones. My favorite seasoning on a GH is Rosemary, still green and added directly to the fire....dang, might have to pop one early Sat for Sunday dinner. Armourdillah ain't all that bad either, part of the pig family.
