Goat

So my buddies and I are spending the year in Afghanistan, so I've been trying my hand at some local cuisine. I had one of the locals that work on our FOB go and get me some goat. Im not sure what part it was, lol i think it was part of the leg though.

I started with about 4 pounds of meat. I seasoned it pretty liberally (wasnt sure what i was gonna end up with) with: salt, pepper, onion and garlic powder. I took some whole garlic cloves and quartered them and sliced openings in the meat and placed quarters inside. Then I cut up some onions, locally grown green chillies and some pears. I placed it all in aluminum foil and wrapped it up tight. I cooked it for about 30 minutes then flipped it over and cooked it for another 20 or so.

All in all it came out pretty good. Im going to give it another try in a few weeks and see what else i can get done. Goat is a fantastic tasting meat.

You can also marinate it over night in lime, lemon and Italian dressing. Season it up and roast it on indirect heat

Check on Cabrito recipes. This is some really remarkable stuff! I have had cabrito in Mexico, San Antonio, Texas, Dallas, Texas and Mason, Texas. Really good stuff!!!

You are right on with the seasonings for a natural tasting cabrito. imo you need to cook longer though, its a low and slow kind of meat normally. I like to grill it a little first over a low coal fire before wrapping, yum yum.
