nice job Stan on the sausage. and like Gator said, if a post is going to be deleted one of the deputy's will PM you letting you know :wink: So far I haven't seen any problems around here :tup:

Update On My Sausage Project

Yesterday I smoked 1/2 of the sausage I made using Mesquite. Today I smoked the other half and used Post Oak. Wanted to make a comparison.
I believe I like the mesquite a little the best, but they are both good.

Well you very fortunant in that yall got good mesquite down in your world. The mesquite from up here smells like smoldering dirty jockey straps and gym socks. I tell this to everybody and they all think I'm crazy. Do you think I'm crazy?

I'm afraid I can't diagnose your mental condition due to the fact that I never have used North Texas Mesquite!

Well you a very fortunant fella. Dont never try no N. Texas mesquite. The smell will make a grown man puke.

I know what your saying BW... When I smoke with mesquite I try to us the main wood only...No Bark..

Seems it makes the flavor stronger with the bark on..

Y'all come on down! I've got lots of big mesquites. Most of them are still alive, but they could be made dead.

I dont hunt far from you Stan...I hunt on the SW side of Gatesville close to King..Could use a load of Skeeter Wood.. :wink:
