Sausage Day
Today was sausage day around here. My wife & I made 21 lbs. of polish style sausage. I used a recipe that came from my late Uncle. I never did taste any of his sausage, so I will see whether it is any good or not. My aunt said it was good.
I plan to smoke them tomorrow, so I can tell you more about the quality then.

Sausage Report
My first try at making smoked sausage using my late Uncle Bill Hamilton's recipe. Made them yesterday and kept them in refrigerator overnight. Started smoking them at 9:30 this morning (20 degrees outside). Set smoker at 180 degrees. Smoked them with very old mesquite chips that were so old the sapwood had rotted away and left only the heartwood. It was very hard wood.
Ready to smoke
Smoked them until 4:45 PM when I turned off the smoker and opened the door. Let them hang until 5:15 PM and brought them inside.
5:15 PM
Had a fine supper of only sausage, home made sauerkraut, and my daughter's homemade salsa.
They are really good if I do say so myself.
If I was making them only for me I would put in more red pepper, but my wife dislikes hot peppers intensely, so these are pretty mild.
Here's the recipe:
20 lbs. 4 oz. ground pork. Ground 2 butts and the meat off some pork chops.
1 quart cold water
7 teaspoons canning salt
1 1/3 Tablespoons sugar
1 1/3 Tablespoons nutmeg
1 1/3 teaspoons ginger
1 1/3 Tablespoons White Pepper
1 1/3 Tablespoons Red Pepper (cayenne)
1 1/3 Tablespoons Black Pepper
1 teaspoon allspice
1 Tablespoons garlic powder
2 teaspoons onion powder
4 teaspoons Prague Powder No. 1
Grind meat, dissolve all the spices, salt and cure powder in the water. Pour over ground meat and mix.

Hey Stan..had you a nice long post about how good the sausage looked...complimented on your twine tying abilities etc..and also thanked you for sharing the recipe. Guess the list poleece found something objectionable in the details cuz it did a dissapearing act. Anyway...great job on the sausage!!

I found that to happen to me too, but I noticed it at the time and it was because I het the back button too soon that my post did not actually register.
Could be one reason

Great looking batch of sausage.
On the deleted posts, they may not have been actually posted. I had this happen to me the other day. I must have hit the preview box next to the submit box. The next page in either case will look almost the same but when you return to the forum your post won't be posted unless you go back and hit the submit button first. If you don't it will be like you never wrote it.

In at least one case I know I submitted it. Others, who knows could have been me. That one I know I submitted I hesitated on before submitting because it was kind of off subject of the thread but submitted it and it went back to the thread with my post showing. Later same thread it was gone. If it is not a moderator then we've got a server that is not updating files or the record index.
