While reading up on how to make buckboard bacon I have become very interested in curing meat, making sausage and making jerky. I was wondering if anyone can recommend any books or products for a beginner. Also where is a good place to go for recipes?

Give Len Poli a try. Haven't visisted over there in a while but at one time he had a real comprehensive web site. Having trouble getting you a clickable link. Just plug the name Len Poli into Google and you will get some hits.

Yeppers CF thanks for the link. Ya know the only thing that drives me crazy about Len's web site (other than he gets a little carried away with exotic ingredients and techniques sometimes:) is he keeps all his recipes in PDF format..Adobe reader blah blah blah. Near impossible to copy em without a pencil and paper or maybe a printer. Guess it to keep folks from messing with em or changing them up or something. If you visit over there much it come in handy to download yourself a little free shareware pdf to plain text converter utensil. Think you can snag one at the link below. Thats where I got mine anyway..and it works well.

Thanks BW, typically I just save a copy in the PDF format. It serves the purpose until I want to modify something for my use....

I will endorse the book and video but not Sausage Maker per se. They are overpriced and try to make you think they are the only source by re branding their products. For example Instacure #1 & 2 are the same as Prague cure #1 & 2, Fermento is likely powdered buttermilk. The book is full of really good information and recipes.

I agree on the prices of cures and whatnot.
The book was a few dollars cheaper than Amazon. :D
