That's a great article!
I dug the recipes at the end. In particular the using the "hand over the grate" temp measurement technique.

I've tried this method sometimes but I usually pull my hand away before I get a good bark. Should I wrap it in foil or pink paper? Keeping my hand there for 2.5 hrs has been tedious in the past.

Seriously, that was a good read and I hope to try some lamb on my pit once the weather gets tolerable.
