Pulled chuckie tacos

Didn’t feel like firing up Blue for a 3.5 lb chuck roast so I attempted the snake method on my Kettle. Temps held pretty well…

I foiled at 165 and pulled off at 205. One small section was perfect but the other two were a little tough. I ran a little Hot due to not getting it on until about 1:00. I’m thinking if I would have gone slow and low for longer it would have helped? Either way the tacos tasted good.

You guys that smoke chuck roast on a regular basis feel free to chime in on how you get it tender. Thanks!

Oh and the wife made the guacamole and jalapeño cream sauce. Both were spectaculars usual.

Now that is perfection. See the moisture and fat content of this as opposed to my latest? That's what was missing on mine. Just no fat on it.
Now, down to business. Jalapeno cream sauce?? Please share, but hopefully you will not say sour cream :banghead: :banghead: That whole plate is to die for.

Thanks guys.

Outlaw - it’s the creamy jalapeño stuff they make in the taco joints. I’m kinda obsessed with it…let me ask the wife if she has a recipe or just wings it.
