Chicken Delights

Boneless, skinless chicken thighs
Opened and light layer of mustard applied
Stuffed with thin dill pickle slivers and pickled green beans
A good BBQ rub sprinkled over it
Folded and wrapped in bacon
Marinaded with a thinned, tangy BBQ sauce for a couple of hours
Grilled at medium heat until done with some hickory chips for smoke

Definitely delightful. :D

I have a big pot of pinto beans with some sliced and sauteed salt pork with smoked pork neck bones and sauteed onions simmering to go with this chicken. :D
