Steak French Style

Postby Sterno » Wed Mar 02, 2011 2:22 pm

I bought a nice 4lbs Argentinian beef tenderloin. Decided to make nice Filet Mignon steaks with some French style condiments.

Ready to be cut.

Image

Cut two nice steaks from the middle.

Image

For potatoes I made Gratin Dauphinois. Ready to add the cream.

Image

Got this lovely cheese which begs to be grated on top of the gratin.

Image

Another nice side dish is Tomate Provencale. Fresh basil, salt and pepper on tomatoes.

Image

Then added a mix of breadcrumbs, parmigiano reggiano, garlic, parsley and melted butter for the crust.

Image

Potatoes are ready! Smells lovely!

Image

Then we need a sauce. Decided to go with Sauce Bordelaise, a red wine sauce. Sauteed the shallots. Add and reduce red wine and demi-glace. Finish with a nob of butter.

Image

Time to ignite the charcoal. Gotta obey the house rules - a beer!

Image

Sear all sides of the steaks.

Image

Move to indirect heat under the lid. Looks ready.

Image

Put it all together. Bon Appétit!

That was incredible! Had to lick the plate! Might have to do some more French cooking soon!

Cheers,
Sterno

Dang Sterno - haven't seen you in the neighborhood for a while. Looks like some mightyfine weather in your neighborhood.

You came in strong. That's an amazing meal - thanks for sharing.

Pretty nice marbling for a tenderloin.

Thank you all for your kind words!!

It was worth the effort, darn good steak. Sauce really made it. I'm seriously starting to think about mixing French cuisine and BBQ & Grilling more together.

Cheers,
