Over the weekend the wife decided she wanted homemade hamburgers, so that was dinner tonight, along with some chicken for the kids and ABTs for Karen and me. My first experience with direct grilling using lump. (ABTs were indirect using lump.)
First, the ABTs, chicken, and burgers on the grill. Chicken and 2 burgers are dusted with Ddog’s basic rub. The other 2 burgers are dusted with HM2. The ABTs are stuffed with fried turkey and chipotle cheddar cheese and cooked in my VersaRack 3000*.
This shot shows my daughter behind Bob (my kettle) and the light I use for winter grilling. I have a porch light, but for some reason it doesn’t quite get the job done for cooking.
And the food. Good stuff!
How about a plate? Sides were baked beans and oven fries, with a couple pickles on the side. The HM2 burgers had a bit of a spicy taste from the rub. Worked great with the chipotle cheddar.
Things I learned during this cook:
1. The lump worked for a great crust on the burgers, but they got a little dry. The chicken came out very juicy, but a little charred, IMO. I need more practice, or a cooler fire, or both.
2. It takes *forever* to cook when you’re watching 3 kids. Especially when the youngest is screaming for her mama, and mama’s not there!
3. When the tribe starts screaming for food, cook the burgers! Don’t wait for the ABTs to finish.
4. Everyone liked the oven fries, but thought they were a little crunchy. Use a lower heat and fewer on the tray to prevent burning.

The fries were perfect for me, but due to timing some got a little more done than others. Kids liked 'em, though, and that's what's important.
Mike, the HM2 with the chipotle cheddar was amazing. A sharpish bite from the HM2, followed by the smoky chipotle, Yum! (Dang, now I'm hungry again. )
Chuck, the only problem with the chicken is it was cooked for the kids. The char had a slight burnt taste, which didn't sit well with 'em. Nathan said he liked it, but "it wasn't the best chicken you've cooked".
Dave, the kids don't like the ABTs. Just means more for the adults.
Yep! I got the idea from a member on another board who used bricks and skewers to cook ABTs. I thought about using expanded metal to do the same thing, then realized how versatlle it could be, from ABTs to chicken wings/legs, even sausages or as a warming area for food. From there, I'm patenting the idea and working on a practical production model. Who knows, maybe it'll be the next BCC stand.
