I had this all planned to be a very simple cook but I didn't count on the "surprise" gusty north winds at the same time I was starting my low smokey stage. The rack slept all night in mustard and then got showered in Rib Tickler (wiffy's orders).
On the Pellet Pooper just about the time the North Wind showed up
Panicked but only momentarily and managed to "Bubba" me a wind break to get the temps down.
Red Green smiled and I started getting smoke.
Three and a half hours into the Cook and more to come.

Foil is off and first "lather" is on - - - I'm liking what I see so far but I'm really hoping for a nice smoke ring and meat that has to be bitten off of the bonz.

thanks, Pard, I did these with the flavor that the Wiffy wanted and they were good but I sure missed the Hootchie Mama and Chipotle Sauce from Suckle Busters - - - next rack belong to my taste buds.
