First of the weekend

The missus has been busting her hump at work, so I sent her on a girls weekend out to Lake Travis. So, just me and the kiddos this weekend. Which means 90% of the cooking will be outside.

Figured I'd also let the kids set the menus for the weekend dinners.

Tonight, my oldest (5) requested steak, corn and salad.

So, it was steak! Ran by the store and grabbed a Choice T-bone (I've become a really big fan at $4.99/lb)

Seasoned with SPG

And reverse seared - I highly doubt I'll ever cook a steak another way.

Resting - total cook time was about 12 minutes

Started slicing and was feeling the pressure....

And the salad and corn....As an aside, my wife got a recipe for restaurant style ranch dressing and it's become all we eat on salads anymore.

It's exactly what is on the hidden valley buttermilk ranch packet. With one major exception. First of all, full on buttermilk is a must. But what the restaurants use is heavy mayonnaise. The kind with double the eggs. We can only find it in bulk here. So when we get it, we eat it A LOT!

If you're a ranch dressing eater, give it a shot. It's worth it.
