Pork chops at the couch house. Light application of Lee and perrin cosher salt course ground pepper onion and garlic powder. Put them over the hot side for just a few minutes then to the tinfoil. These are the assorted cuts, I prefer them to the leaner cuts. If God made anything better than pork fat, he kept it to himself.

^^^ What he says. Don't ever think of it as monotonous. Why? No 2 cooks are ever the same. There is always something that will differ from one cook to the other; weather, wind, in-laws... These factors WILL influence your cook, especially the in-laws... If you cook a brisket a day for an entire year, each one will have a different journal entry ;) What we should highlight are the moments we spend with the ones we care about while preparing these meals. The record can skip and skip and skip on this part as long as it wants to! :cheers:
