I have not used my old hot smoke box in many year. Time to right that wrong.
Fuel. methylated spirits with paper towels as wicks.
Used Manuka wood chip in the base of the box.
Light fuel, place box over. When it starts to smoke on with the fish
As this is Salmon and hot smoking I went with 10 minutes as not to over cook it.
