I use fryer chickens in mine. My chickens are always juicy and moist. I suspect that your cooking a little too long. At the end, I stop and check the chicken temp with my BBQ thermometer. It works for me. Your mileage may vary.

It was the chicken I used. It was one of the giant roasting hens. I've since used regular fryers and they've turned out wonderfully. Spun some beef and a leg of lamb with success as well!

Ours is pretty good, but in saying that I saw on rick steins cooking programme he did lamb raised on the salt marshes in Wales eating samphire. He said it gave the meat a real nice taste.
