Yeah just a mix I've refined over the years, oup is right about the meat, thighs are best and I do under a grill which is a slower cook. The flavours are from the garam masala, coriander,fennel, cumin,green cardamon,black cardamon seeds along with peppercorns cinnamon,cloves, cassia bark and a few I can't think of ATM. I'm glad you tried it oup, I liked the sides as well.

I had a grill pad that I ?started? to use but then I thought about those great grill marks that Sailor had so I just went straight onto the grill and over the coals - - - maybe indirect would work
