Bone in Pork Butt

Smoked a 6.5 bone in pork butt yesterday. Used combo of red oak/apple/pecan @225-250 for 9 hours. Had to pull it a little early at 190 deg (stall took forever!). Did not wrap it and it turned out great. Good bark and plenty moist. The bone pulled right out but I imagine it would have been even more tender had I made it to the 195-203 range. Served on a bun topped with homemade slaw. No BBQ sauce required!

That's what I like about pork butts - they have a built in thermometer! Looks good.
