First and foremost, Happy 4th to all of the forum members, and thanks to all of the women and men who make it possible for us to enjoy places like this. Gator, thank you for giving us this outlet as well !!

So today we wanted to do something a little different than the usual that we do on the 4th.

Decided to dice up some Scallions, Shrooms, Garlic, Smoked Bacon, and throw them on the cast over lump on the Akorn.
Sauteed the veggies and garlic, then seared some chicken breasts ( something I'm not fond of cooking ) and then foiled them in the cast for 15 minutes each side.
Mixed up some butter, flour, chicken broth and sour cream, shredded parmesan and laid the breasts in the thickened sauce for a simmer for 20 minutes.

Very rich, but PACKED with flavor. The wifey and I think this will be one of our monthly meals.

Wow. I never venture into anything other large pieces of meat, beans, mac and cheese, and stuffed peppers over the fire. This forum opened my eyes to what is truly possible. I'm thinking my next might be a fatty with something similar to these veggies on the side.

Mushrooms are seriously underrated in our country and I find that incredibly irresponsible of our culinary crop. Beautiful meal here!!

They are highly rated in my house, my kids and grand kids love them, when we have steaks I always offer 2 sauces , shroom and my home made garlic sauce. I love shrooms on toast. Goes back to when we were kids, we picked wild shrooms from paddocks near us. I cook mine in butter , let cool, then reheat with some cream. The 2 cook is the secret.

Yeah, you can pretty much cook anything over a fire that you could do in a kitchen I've found out over the years.
I absolutely LOVE cast iron over charcoal/lump.

Definitely can't wait to see your cook, sounds awesome !!

Thank you, I appreciate the kind words. I've always thought food tasted better if it looks good so I try to make as much as presentable as possible..
I think you and PB will love it if you try it, and it's so easy to make. Hopefully we can see your success when you give it a whirl .
