Pard, I've been thinking about this post you made and it reminded me of how many different cuisines from different areas and cultures like the South, Louisiana and Mexico that have had a major effect of what and how we use different foods. Whether they be the main course or leftovers and a lot of those recipes comes from basic and simple hard working folks that were trying to feed the Family on a limited budget. I'm sure that many of our members will say the same thing :dont: it's kinda the way weez raised up yanno? You do the same with some of your Indian, Thai and Kiwi cooks that just amaze me but there's SOS and not big deal with Y'all. :salut:

As you know we have family here every Sunday for dinner, as the grandkids get older, there is now NO leftovers.no matter how much I make, it all goes. I used to love making shepherds pie from left over lamb. Haven't been left over lamb in a year or two. Pile of garlic bread and pile of smoked chicken fettuccine......all gone, not 1 spoonful left. Then fudge and custard and ice cream. Man they can eat. It was Islas 8th birthday so she got to choose her faves. Was a good night.

Lol, I said to the wife when kids left last night, man it's gone quiet, she said I shouldn't complain, as we are lucky we get to spend time with our family. She is right. We are lucky. I guess in 10 years time it might be different. Grandkids will be doing their own thing??

I got over the smoke ring a long time ago. Most of the time it's there. Sometimes it's not. What matters is having some great ribs to eat. No bodies taste buds can tell if the ring is there are not. I've cooked for and fed a lot of people and nobody has ever mentioned a smoke ring. :dont: As good as your ribs look nobody is going to be thinking about a smoke ring.
