No Meat Chillin and Grillin

Hatch Season has pretty much run the Course here in the Lone Star so the other day I grabbed what "little" was available at HEB along with some Serranos, Jalapenos and Etc so I could make one 'final' batch of Roasted Hatch Salsa. My previous batch was so perfect for my taste buds that I couldn't use the other Salsas until that batch was gone. However, after this batch I'll have to ease back into normal non-seasonal Salsa. :(

Everything is done except for the processing so I'd better get to work. :cheers:

Cilantro is in - - - I wish I could make larger batches but my situation just doesn't call or allow for it so this will have to do - - - I hope to get 4 or 5 pints out of this one when I'm finished - - - just did a taste test and I'm excited. Now comes the boiling and canning but that might have to wait until tomorrow :dont:

Looks good to me!! I would throw some of that on a big fat breakfast taco and have stuff running down my arm by the time I was through!!

I'm a loooooooong ways from putting out the Salsa that Y'all do :bow: :salut:

Messing with Chilies has never bothered me but today I have an Egghead Ghost hovering over me and saying "I told you to wear gloves" :banghead: :whiteflag:

Final Update on my Roasted Hatch Salsa.
Whoever said "A watched pot never boils" must have been a hot water canner :whiteflag:
However, it's done and finished and I ended up with 5 pints which I will hoard.

Had some on my Breakie Taco Pizza this morning and, altho it was good, it seemed a little sweeter and milder than the last batch but never fear I will eat it until it's gone. It might have been the roasted Rotel Maters and Green Chilies that I added for some liquid :dont: Still glad I did it. :tup:
