Got a 15.06lb USDA Choice Brisky tonight for around $24. With smoking diligence, and the Lord's blessing, it should be a yummy barky smokey Saturday!

Well, she's on the ole WSM. Hope I don't screw it up. Biggest Brisket I've done so far. Third attempt. If she's like the first two, I'll be good.

It was a sacrifice. Tonight you know what I'm having for supper? Slightly frozen green grapes. For lunch and supper tomorrow? Prolly some Ramen noodles!

Go ahead and put that shack attack sauce together and it'll be ppppppppppppperrrrfect by the time the BB is done.

Took a nap between 3:30 and 5 and I was out of fuel. The meat was at 195, so I went to Wally World real quick and got some KB. Fueled back up now and gettin' back to temp. May throw on some of bush's baked beans in a cast iron skillet.

Put them under the brisket if possible and let it drip :)

Also good adding some BBQ sauce, onion, bell pepper, brown sugar and SPG or rub.

Out of my 3 Briskets so far, this has been my least favorite. It's moist. It passed the pull test. It passed the fold test. However, something was off with my bark this time around (too easily separated), and . . . I need a new knife, clearly. Nevertheless, it tastes great. I need to trim more next time.

I just didn't meet my hopes. My standards in pretty much every other category except "slicing" has been met. I'm gonna chop 1/2 of it, and perhaps put the other 1/2 in a chili tonight in the slow cooker.
