Went pretty well for my first try with this cut. I learned a lot and will adjust accordingly.
Rubbed with Louisiana Hot Sauce and S&P and smoked with Oak.

Fire ran a little cooler than I originally hoped for and I pulled them a little too early not allowing the fat to render as completely as it could’ve.

Gotcha - I’ve made the same mistake on beef ribs. They really need that fat to render out.
