I used Sucklebusters SPG for the rub and made Snow’s mop sauce as posted in Texas Monthly. Snow’s uses post oak but I had hickory lump and cherry chunks…I will be doing this again. They were good!

Thank you. Yes, Sprouts had a sale a few weeks back. They were sliced and pre packaged. I just bought them and tossed them in the freezer until this weekend.

I love grilled pork steaks,I think when they are cut from the blade the extra fat content and rub makes them moist and very flavorful ,nice plate.
