Fish Sauce Dry Aged Beef Hack

i have been doing plenty of reading and watching videos about different ways to dry age at home.

Whilst most of them are cheats which dont seem to work like the real thing i found one which looked interesting and considering it only takes 6 days and 1 ingredient i already had on hand i decided to take the plunge.

For comparison I kept 2 additional steaks plain, one dry aged and 1 fresh.

- All steaks were 250gms each.
- Fish sauce had no added MSG.


The process is now complete, the steaks will be cooked tonight with a light sprinkle of salt and pepper only on the gas grill. I dont want to have any other flavours imparted on the meat if possible.

The fish sauced meat does not smelly fishy at all.
The texture is similar to the dry aged, not quite as tacky.
Steaks will be cooked to med-rare.

I will take photos before and after the cook and share my thoughts.

I use fish sauce that way as well, I also use a lot of kechup manis. I like the Asian influences a lot.

Visually: the fish sauce piece looked terrible and you do eat with your eyes before your mouth so big disappointment there.

Smell: no fishy smell at all but definitely funky but so was the dry aged non fish sauced piece.
Fresh steak had the best smell which was normal beefy smell.

Taste: The fish sauce piece didnt have a fishy taste but it definitely had a savoury funky taste similar to real dry aged. Flavour is intense, beefy, funky.

Texture: meat wasn't juicy like normal steak but wasn't tough either. I like a juicy steak though so another fail.

Verdict: i am not a big fan of dry aged beef to begin with so i might not of been the right person to do this experiment but safe to say i wont be doing this again. Wife and kids also wouldn't eat it.

I ended up eating the normal steak and a chicken sausage and gave the left over fish steak to the dog.....he loved it.
