First real cook of the season, with country ribs at a buck twenny-nine/lb. Treated to the S. Louis preparation, which consists of a rub and a grilling, then in a tub of beer/BBQ sauce, covered, and simmered. Except the fire was too high, resulting in the happy accident we're calling Pork Candy. Served with tater salad and leaves.
We nabbed it just in time. Two seconds more and we'd have been crying over Incinerated Hog

Guess what I just took out of the Freezer and put in the Frig to defrost

For the last two days we had temps up in the 70's around here, so we decided to grill someting outside while we could (tomorrow it's back to the 40's).
I was a little rusty making this dish - hence the higher temps and the "happy accident". But as long as there's no complaints eating it, all is well.

Looks great to me, Kenshin. Lighting or something made it look a little dry in that first pic, but it looks fabulous on the plate. :)

Thanks! I think we'd want to reproduce this with the next batch and pull it a bit sooner so the sauce is thick but short of almost-black.

The two Country Style Ribs I'm doing today are just gonna get grilled, however. I'll snap an pic in a little while and that should explain why I'm not bathing them this time.

We grilled them before bathing, and were gonna grill 'em again when they were done. But we saw how, er, dark they were without the second grilling, and just hurried inside to plate it.
