Did some ribs on the kettle using the Slow N Sear. Seasoned w/ Meat Church Holy Cow and sauced with Franklin Sweet Vinegar sauce. No wrap, I mainly just stayed in the pool and got out to spritz.
Bills heavy on my heart as I post this. It’s guys like him that make this place fun. We are all blessed to have a group of like minded individuals to share our love for BBQ, life, thoughts and ideas. I’m thankful for all of you.

Similar to how I do mine nowadays. Wrapping made them kinda gummy and I could taste the cider as much as the pork.
Ribs look great though. Fairly decent smoke ring for charcoal on a kettle too! Potatoes look great also. Nice crispy skin with them unwrapped, just the way I like em.

Thanks y’all. Turned out really good. Could’ve used a hair longer cooking but they were fine and the flavor profile was excellent. Like I said. Last minute decision so I was cutting it close on time but really didn’t want to wrap.
