Just Simple Pork Chops..No Sides

My wife and I are in a carnivore mood tonight, so I grilled chops, no sides.

I rubbed my chops with a sturdy dose of Oakridge Santa Maria, and the wife's were plain. Cooked hot and fast on the BGE with some hickory chips for smoke. It's the first time I tried Santa Maria on pork chops and I'm sold........these chops rocked.

I'm off work until 5 July, and I have a full list of cooks planned........life is good! :D

Pork steaks of any kind are so difficult to do. A few minute too soon and they're pink; a few minutes too long and they're dry. Congrats if you hit it

I agree......not much margin for error with chops.

I nailed these.....no pink and and tender. The Grill Gods smiled on me this evening. :D

Those look great :salut: - - - they are one of the meats that I shy away from because of what Rambo mentioned - - - ?if? I do a pork chop on the grill, then it's usually stuffed with goodies also :tup:
